Stuffed Zucchini Rolls (Print Version)

# Ingredients:

01 - 4 medium zucchini.
02 - 200g soft goat cheese.
03 - 1 chopped onion.
04 - 2 minced garlic cloves.
05 - 50g pine nuts.
06 - 1 tablespoon olive oil.
07 - 1 teaspoon dried thyme.
08 - 1 teaspoon paprika.
09 - 1 egg.
10 - 100g breadcrumbs.
11 - Salt and pepper to taste.

# Instructions:

01 - Slice the zucchini into thin strips, sprinkle with salt, and let sit for 30 minutes to draw out water. Rinse and pat dry.
02 - Heat olive oil in a pan and cook the onion, garlic, and pine nuts until golden. Combine with goat cheese, paprika, thyme, egg, salt, and pepper.
03 - Spoon some filling onto each strip of zucchini, roll them up, and coat in breadcrumbs.
04 - Arrange the rolls on a baking tray lined with parchment paper. Bake at 180°C for 20-25 minutes until crispy and golden.

01 - Goes well with a spiced tomato or yogurt-based sauce.
