Zucchini chorizo goat cheese bites (Print Version)

# Ingredients:

→ For the Base

01 - 1 tablespoon of green pesto
02 - 20g olive oil
03 - 100g heavy cream
04 - 70g all-purpose flour
05 - 1 packet of baking powder
06 - 2 eggs

→ For the Topping

07 - 1 small spring onion
08 - 150g goat cheese log
09 - 100g mild chorizo sausage
10 - 450g zucchini

# Instructions:

01 - Rinse the zucchini and slice them into thin rounds. Cut the chorizo and goat cheese into thin slices as well. Peel and finely chop the spring onion.
02 - In a mixing bowl, whisk together the eggs and the flour. Pour in the heavy cream, pesto, olive oil, and baking powder. Stir everything until it’s smooth.
03 - Add the zucchini, chorizo, goat cheese, and spring onion to the batter. Gently mix so all the topping is well coated.
04 - Heat the oven to 180°C. Scoop the mixture into a six-mold tray (use round molds if possible). Bake for 30 minutes.

01 - Great to eat warm or at room temperature, alongside a green salad
02 - You can make these ahead of time and warm them up slightly before eating
