Rinse the zucchini and slice them into thin rounds. Cut the chorizo and goat cheese into thin slices as well. Peel and finely chop the spring onion.

In a mixing bowl, whisk together the eggs and the flour. Pour in the heavy cream, pesto, olive oil, and baking powder. Stir everything until it’s smooth.

Add the zucchini, chorizo, goat cheese, and spring onion to the batter. Gently mix so all the topping is well coated.

Heat the oven to 180°C. Scoop the mixture into a six-mold tray (use round molds if possible). Bake for 30 minutes.
