Turn your oven on to 180°C. Grease your cake pan and dust it with flour, or line it with baking paper.

In a big mixing bowl, stir together the flour, almond powder, baking powder, and salt.

In a different bowl, whisk the yogurt, sugar, oil, and eggs until everything blends smoothly.

Gradually mix the dry ingredients into the wet ones. Toss in zest if you’re using it.

Pour the batter into your pan and smooth out the top. Sprinkle flaked almonds on top if you feel like it.

Pop the cake in the oven for 30–40 minutes. Stick a knife or skewer in; if it comes out clean, it’s done.
