Veggie patties almond sauce (Print Version)

# Ingredients:

→ For the patties

01 - 1 garlic clove
02 - Zest from one organic lemon
03 - 80g of finely grated Grana Padano Riserva cheese
04 - 4 sprigs of dill
05 - 2 medium carrots (about 200g)
06 - 1/2 a broccoli (around 250g)
07 - 2 tablespoons of olive oil
08 - Black pepper
09 - 2 tablespoons of rice flour

→ For the sauce

10 - 15cl of water
11 - 1cl of soy sauce or tamari sauce
12 - 40g of whole blanched almonds

# Let's Cook:

01 - Grate the peeled carrots and broccoli. Chop the garlic finely, zest the lemon, and finely slice the dill.
02 - In a large bowl, combine the grated veggies with the cheese, garlic, lemon zest, and dill. Add black pepper and let it sit for a little while.
03 - Soak the almonds in warm water for 15 minutes. Blend them together with the water and soy sauce until smooth and creamy.
04 - Roll the mix into balls, coat them with rice flour, then flatten them into rounds in greased molds or directly in the pan.
05 - Heat olive oil in a pan and cook each side of the patties for 5-7 minutes. Keep cooking until they're golden and crispy.

# Tips:

01 - You can make this gluten-free by swapping soy sauce for tamari sauce.
02 - You don’t need tart ring molds—they’re optional for shaping the patties.
