Sticky Toffee Cake (Print Version)

# Ingredients:

01 - 1 cup (125g) plain flour.
02 - 1 teaspoon baking soda.
03 - 1/2 teaspoon cinnamon powder.
04 - 1/4 teaspoon salt.
05 - 1 teaspoon baking powder.
06 - 1 cup (200g) soft pitted dates, chopped.
07 - 1 cup boiling water.
08 - 3/4 cup (150g) packed light brown sugar.
09 - 2 large eggs, at room temperature.
10 - 1/2 cup (115g) unsalted butter, softened.
11 - 1 teaspoon vanilla extract.
12 - 1 cup (200g) brown sugar (for the sauce).
13 - 1 teaspoon vanilla extract (for the sauce).
14 - 1/2 cup (115g) unsalted butter (for the sauce).
15 - 1 cup (240ml) heavy cream.

# Instructions:

01 - Combine dates, boiling water, and baking soda. Leave for 15-20 minutes until soft.
02 - Mix cinnamon, flour, baking powder, and salt in a bowl.
03 - Beat the butter with brown sugar. Add vanilla and eggs. Mix softened dates, then fold in dry mix slowly.
04 - Spread batter in a greased 8-inch dish. Bake at 350°F for 30-35 minutes, checking for doneness with a toothpick.
05 - Melt butter, stir in cream and brown sugar. Whisk until smooth, then add vanilla.

01 - It's great to prep ahead of time.
02 - Serve warm, pouring sauce on top.
03 - Ice cream or whipped cream makes a tasty addition.
