Stuffed sweet potato chicken (Print Version)

# Ingredients:

→ For the Filling

01 - About 600g of sweet potato
02 - One medium onion
03 - A quarter kilo (250g) of chicken breast
04 - 25g of shredded cheddar cheese
05 - 150g of tomato sauce
06 - Some olive oil
07 - Dried oregano
08 - Salt and pepper to taste

# Instructions:

01 - Turn the oven on to preheat it to 200°C. Slice your sweet potato lengthwise in half and place the cut side facing down on a baking tray with parchment paper. Bake for 45-60 minutes or until the middle is tender.
02 - Chop the onion super thin and roughly dice your raw chicken breast. Cook the onion in some olive oil first, then toss in the chicken and cook until golden brown. Stir in the tomato sauce, plus some salt and pepper.
03 - Scoop out the sweet potato flesh and smash it with a fork. Mix this into the chicken preparation you just made. Fill the empty potato skins with this mixture.
04 - Sprinkle shredded cheddar and a bit of oregano on top. Toss it under the broiler for a few minutes until the cheese melts and gets golden.

01 - Serve alongside a fresh salad or some veggies.
02 - Check if the sweet potato is soft by poking it.
