Mini Bacon Stars (Print Version)

# Ingredients:

01 - 150 g of shredded cheese (Gouda or Emmental).
02 - A small onion.
03 - A pinch of salt.
04 - 125 g of cold butter, diced.
05 - Fresh parsley or chives.
06 - 200 g of crème fraîche.
07 - 100 g of sour cream (Schmand).
08 - 150 g of diced bacon.
09 - 250 g of flour.
10 - 5-6 tablespoons of cold water.
11 - Salt and pepper.

# Instructions:

01 - Combine the flour, diced butter, and a sprinkle of salt in a big bowl. Use your fingers to mix until it feels crumbly.
02 - Slowly add some cold water while kneading until the dough comes together smoothly. Wrap it up in plastic wrap and chill for 30 minutes.
03 - Set your oven to 200°C with fan mode and line a tray with parchment paper.
04 - Roll the dough out on a floured countertop to about 3-5 mm thick. Cut out star shapes and arrange them on the tray.
05 - Mix together sour cream and crème fraîche, season with some salt and pepper, and spread it over each star shape.
06 - Scatter the onions and bacon over the stars, then sprinkle on the shredded cheese.
07 - Bake for about 15-20 minutes until the stars are crispy and the cheese is golden brown.

01 - These bite-sized versions put a fun spin on traditional Alsatian Flammkuchen.
02 - You can make these mini treats ahead of time and warm them back up in the oven before serving.
