Shrimp Rice Bowls (Print Version)

# Ingredients:

→ For the Shrimp

01 - 450g medium-sized shrimp, peeled and deveined
02 - 1 teaspoon smoked paprika
03 - 1 tablespoon olive oil
04 - 1/2 teaspoon garlic powder
05 - 1/4 teaspoon cayenne pepper (optional)
06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon black pepper

→ For the Spicy Mayo

09 - 1 to 2 tablespoons sriracha
10 - 1/2 cup mayonnaise
11 - 1 teaspoon lime juice

→ For the Bowl Base and Toppings

12 - 2 green onions chopped
13 - 1 tablespoon rice vinegar (optional)
14 - 1 cup shredded carrots
15 - 1 avocado sliced
16 - 2 cups jasmine or brown rice
17 - Soy sauce or tamari (optional)
18 - 1 cup cucumber slices
19 - 2 tablespoons sesame seeds (optional)

# Instructions:

01 - Combine the shrimp with olive oil and the seasonings. Cook them in a pan over medium-high heat for 2-3 minutes per side, until they turn pink and opaque.
02 - In a bowl, mix together lime juice, mayo, and sriracha until it's smooth.
03 - Cook the rice by following the package directions. Fluff the rice with a fork once it's ready, and stir in rice vinegar if you'd like.
04 - Divide the rice into four bowls. Place shrimp and the toppings on top. Drizzle with the spicy mayo and sprinkle sesame seeds. Add soy sauce if you want!
