Texas Smothered Chicken (Print Version)

# Ingredients:

01 - 2 big chicken breasts.
02 - 1/4 pound of shredded Monterey Jack cheese.
03 - 1 tablespoon butter, plus more if necessary.
04 - 1 teaspoon flavored salt.
05 - A medium onion, sliced into 1/4-inch rounds.
06 - 1/2 teaspoon ground black pepper.
07 - A half-pound of sliced button mushrooms.
08 - Add a pinch of salt to your liking.

# Instructions:

01 - Slice chicken breasts in half horizontally. Wrap in plastic and softly pound. Sprinkle seasoning on both sides.
02 - Over medium-low heat, melt your butter with a sprinkle of salt. Toss in onions; cook for a few minutes. Add mushrooms, letting them brown for about 3-4 minutes. Take the mixture off the heat.
03 - Add more butter to the pan if needed. Cook the chicken for 6-8 minutes on one side. Flip it, and cook for another 3-4 minutes.
04 - Pile the cooked vegetables on the chicken. Sprinkle on cheese and let it melt before serving right away.

# Notes:

01 - Don’t put too much chicken in the pan at once—give each piece space. If too thick, press chicken to even size for cooking. Best served hot to enjoy the melty cheese.
