Boil the potato in water for around 15 minutes, then sear the turkey slices in a frying pan.

Line a baking tray with parchment paper. Spoon four blobs of honey onto the sheet. Sprinkle with pepper, then place the cooked turkey on top.

Add a slice of potato over the turkey, followed by a piece of reblochon cheese.

Cut the puff pastry into squares and cover each stack. Brush them with the egg yolk, poke some holes for steam with a fork, and bake at 180°C for 15-20 minutes until golden brown.

Pull them out of the oven, flip them over, and slice each stack in half to serve.
