# Ingredients:

01 - 100 ml olive oil
02 - 200 g flour
03 - A packet of baking powder
04 - 3 eggs
05 - 100 ml milk
06 - Pepper to taste
07 - Salt to taste

→ Toppings

08 - A handful of fresh basil, chopped
09 - 100 g grated mozzarella
10 - 100 g cherry tomatoes, halved

# Let's Cook:

01 - Set your oven to 180°C (350°F) so it can preheat.
02 - In a large bowl, combine the flour and baking powder. Stir in the eggs, milk, and olive oil. Keep mixing until the mixture looks smooth.
03 - Gently fold in the grated mozzarella, chopped basil, and season the batter with salt and pepper.
04 - Divide the batter evenly into muffin tins that have been greased or lined. Place a halved cherry tomato on top of each, with the cut side facing up.
05 - Pop the tins into the oven and bake for 20 to 25 minutes until the muffins look golden and puffed up. Use a knife tip to check if they're cooked through.
06 - Let the muffins cool down before taking them out of the tins. You can enjoy them warm or cold.
