In a pan over low heat, cook the bacon pieces for about 4 to 5 minutes without any oil.

In a large bowl, combine flour, baking powder, chunks of butter, egg, salt, pepper, bacon bits, cheddar, and fried onions.

Knead the mixture either by hand or using a dough mixer until the texture becomes smooth and even.

Line a baking tray with parchment paper, then make small dough balls and space them out on the tray (about 14 cookies). Lightly flatten each cookie and, if you’d like, sprinkle a little cheddar on top.

Put the cookies in a preheated oven at 180°C and bake for 20 minutes.
