Spinach and Mushroom Stir-Fry (Print Version)

# Ingredients:

→ Base

01 - 450g of mushrooms, like cremini, white button, or a mix of both
02 - 4 cloves of garlic
03 - 4 cups of fresh spinach
04 - 2 tablespoons of olive oil
05 - A tablespoon of fresh lemon juice
06 - Salt and pepper to your liking

→ Optional Toppings

07 - Fresh parsley
08 - Red chili flakes

# Instructions:

01 - Wash the mushrooms and slice them. Rinse the spinach leaves. Chop the garlic finely and extract the lemon juice.
02 - Warm up olive oil in a big pan over medium heat. Add the sliced mushrooms and stir them around for 5–7 minutes until they turn golden brown.
03 - Toss in the chopped garlic and keep stirring for another minute or two.
04 - Stir in the spinach and mix until it softens slightly. Add salt, pepper, and lemon juice for seasoning.

# Notes:

01 - Make it creamy by adding a bit of crème fraîche at the end of cooking.
02 - Serve this dish as a vegetarian main course or a side.
