Roasted carrots yogurt sauce lemon (Print Version)

# Ingredients:

→ Veggies and Dairy

01 - 200g of thick Greek yogurt
02 - 600g of fresh carrots

→ Spices and Seasonings

03 - Half a clove of garlic
04 - The juice and zest from half a lemon
05 - A couple of tablespoons of olive oil
06 - Four generous dashes of paprika
07 - Salt and pepper to taste

# Instructions:

01 - Heat your oven to 200°C. Rinse off the carrots and scrub them well if you’re not peeling them.
02 - Depending on their size, slice them in half or into quarters lengthwise.
03 - Lay the carrots in a baking dish, drizzle with olive oil, sprinkle on some paprika, add salt, and give it a good stir. Roast them at 200°C for 30 minutes until they soften and get a bit golden.
04 - In a mixing bowl, combine the Greek yogurt, grated garlic, olive oil, lemon zest, and juice. Add a pinch of salt and pepper at the end.
05 - Spread the yogurt sauce into a serving dish, place the roasted carrots on top, and finish it with a drizzle of olive oil and a sprinkle of lemon zest if you'd like.

01 - You can enjoy this dish warm or at room temperature.
02 - Peeling the carrots is totally up to your preference!
