Heat your oven to 200°C. Rinse off the carrots and scrub them well if you’re not peeling them.

Depending on their size, slice them in half or into quarters lengthwise.

Lay the carrots in a baking dish, drizzle with olive oil, sprinkle on some paprika, add salt, and give it a good stir. Roast them at 200°C for 30 minutes until they soften and get a bit golden.

In a mixing bowl, combine the Greek yogurt, grated garlic, olive oil, lemon zest, and juice. Add a pinch of salt and pepper at the end.

Spread the yogurt sauce into a serving dish, place the roasted carrots on top, and finish it with a drizzle of olive oil and a sprinkle of lemon zest if you'd like.
