In a small bowl, mix olive oil, honey, garlic, paprika, Provence herbs, a sprinkle of salt, and some black pepper.

Halve the butternut, scoop out the seeds, and peel it. Make thin cuts across each piece without slicing all the way through.

Brush the marinade generously over the butternut halves using a kitchen brush. Sprinkle some sea salt on top.

Pop it in the oven at 375°F for about 60 minutes. Adjust if your butternut is smaller.

Once it's out of the oven, crumble the feta over it, drizzle with a bit of honey, and top with crushed walnuts and pine nuts.
