Roasted butternut honey feta (Print Version)

# Ingredients:

01 - 1 butternut squash.
02 - Olive oil.
03 - 1 minced garlic clove.
04 - 1 tablespoon honey.
05 - Smoked paprika.
06 - Provence herbs.
07 - Sea salt.
08 - Black pepper.
09 - Feta cheese.
10 - Crushed walnuts.
11 - Pine nuts.

# Instructions:

01 - In a small bowl, mix olive oil, honey, garlic, paprika, Provence herbs, a sprinkle of salt, and some black pepper.
02 - Halve the butternut, scoop out the seeds, and peel it. Make thin cuts across each piece without slicing all the way through.
03 - Brush the marinade generously over the butternut halves using a kitchen brush. Sprinkle some sea salt on top.
04 - Pop it in the oven at 375°F for about 60 minutes. Adjust if your butternut is smaller.
05 - Once it's out of the oven, crumble the feta over it, drizzle with a bit of honey, and top with crushed walnuts and pine nuts.

01 - Pairs really nicely with a green salad or roasted veggies.
02 - Cooking time can differ depending on the butternut's size.
