Roast with Apples & Nuts (Print Version)

# Ingredients:

01 - 1.2kg of beef roast.
02 - 6 slices of bacon.
03 - 4 apples.
04 - 1 onion.
05 - 4 bunch carrots.
06 - 1 clove garlic.
07 - 3 tablespoons chopped hazelnuts.
08 - 3 tablespoons olive oil.
09 - 2 tablespoons honey.
10 - Salt.
11 - Pepper.

# Instructions:

01 - Peel the onion and slice it thinly.
02 - Clean the carrots, then chop them into chunks.
03 - Wash the apples and slice them into quarters.
04 - Wrap the bacon strips around the beef roast.
05 - Use kitchen string to securely tie up the roast.
06 - Warm up the olive oil in a cast-iron pot.
07 - Add salt and pepper to the roast on all sides.
08 - Put the roast in the pot and brown it over medium heat for 10 minutes.
09 - Take the roast out of the pot temporarily.
10 - Cook the onion for 5 minutes on a low heat until softened.
11 - Put the roast back into the pot.
12 - Arrange the apples and carrots around the roast.
13 - Sprinkle just a little more salt and pepper.
14 - Pour in 50ml of water.
15 - Drizzle the honey over the roast.
16 - Cover the pot and cook gently for 1 hour 15 minutes.
17 - Turn the roast over and baste it often while it cooks.
18 - Cut and remove the string before carving to serve.
19 - Scatter the chopped hazelnuts on top as garnish.
