Quinoa Sweet Potato Patties (Print Version)

# Ingredients:

01 - 200g of plain quinoa.
02 - 400g of peeled and chopped sweet potatoes.
03 - A medium-sized onion.
04 - 80ml of olive oil.
05 - Two garlic cloves.
06 - 2 teaspoons of freshly grated ginger.
07 - 1 finely chopped chili pepper.
08 - 1½ tablespoons of Indian curry powder.
09 - Half a bunch of chopped coriander leaves.
10 - A small egg.
11 - 50g of whole-wheat flour.
12 - Greek yogurt for dipping.
13 - Salt and pepper to taste.

# Instructions:

01 - Cook the sweet potatoes in boiling water until soft. Mash them into a smooth puree and let them cool fully.
02 - Boil 500ml of water and cook the quinoa for 15 minutes. Strain out the water and leave it to cool down.
03 - Sauté the onion and ginger in olive oil for 8 minutes. Toss in garlic, chili, and curry. Lower the heat and cook for 3 minutes.
04 - Combine the mashed sweet potato, cooked quinoa, flour, spice mix, egg, and coriander. Shape into patties and put them in the fridge for 30 minutes.
05 - Fry the patties in hot oil for about 3 minutes per side until golden brown. Serve them with Greek yogurt.
