Fresh octopus salad (Print Version)

# Ingredients:

01 - 1 octopus (about 4 pounds).
02 - Half a medium onion, diced.
03 - Half a red bell pepper, chopped.
04 - Half a green bell pepper, chopped.
05 - Half a yellow bell pepper, chopped.
06 - 2 garlic cloves, minced.
07 - 10 green olives, sliced.
08 - 3/4 cup olive oil.
09 - 4 tablespoons white vinegar.
10 - Juice of 2 limes.
11 - 2 tablespoons fresh cilantro.
12 - 2 bay leaves.
13 - Half an onion for cooking.
14 - 2 garlic cloves for cooking.
15 - 1 teaspoon kosher salt.

# Instructions:

01 - Simmer the octopus for 50-55 minutes with bay leaves, salt, garlic, and onion in the pot.
02 - Slice the cooked octopus into bite-sized pieces.
03 - Combine lime juice, olive oil, and vinegar in a bowl, whisking until it mixes well.
04 - Toss the octopus, veggies, olives, cilantro, and dressing together, then season to taste.
05 - Leave it in the refrigerator for at least 4 hours before serving.
