Mediterranean Chicken Dish (Print Version)

# Ingredients:

01 - 4 chicken breasts.
02 - 4 potatoes, diced.
03 - 1 green bell pepper, chopped.
04 - 1 red bell pepper, chopped.
05 - 400g canned chopped tomatoes.
06 - 1 onion, sliced thin.
07 - 3 garlic cloves, minced.
08 - A mix of dried Provencal herbs.
09 - Salt and pepper to taste.
10 - Olive oil.
11 - Chopped fresh parsley for garnish.

# Instructions:

01 - Slice the chicken breasts, chop the peppers and potatoes, and mince your garlic and onion.
02 - Heat olive oil in a large pan. Sear the chicken on both sides until golden and set aside.
03 - Using the same pan, sauté the garlic and onion until soft and clear.
04 - Toss in the diced potatoes and peppers, giving everything a quick stir to cook a little.
05 - Pour in the canned tomatoes, sprinkle the herbs, salt, and pepper. Add the chicken back in and let it simmer for 20-25 minutes.
06 - Make sure the potatoes are cooked through, sprinkle with parsley, and serve immediately.
