Italian Sausage Pasta Soup (Print Version)

# Ingredients:

→ Proteins & Base

01 - 1 tbsp olive oil
02 - 1 pound Italian sausage, casing removed
03 - 1 small onion, diced
04 - 2 minced garlic cloves

→ Liquids & Dairy

05 - 2 quarts chicken broth
06 - 1/2 cup heavy whipping cream
07 - 1 (14.5 oz) can of diced tomatoes

→ Pasta & Cheese

08 - 1/2 cup grated Parmesan
09 - 1 cup small ditalini pasta

→ Seasonings

10 - 1/2 tsp oregano (dried)
11 - 1/2 tsp dried basil
12 - Salt and black pepper to your liking
13 - Chopped fresh parsley for decoration

# Instructions:

01 - Heat oil and cook sausage, crumbling it as it cooks. Remove once browned.
02 - In the same pan, soften the onion and garlic until they're fragrant and see-through.
03 - Pour in tomatoes, broth, and herbs. Add sausage back and let it gently cook.
04 - Tip in the pasta and let it cook just until it’s tender.
05 - Mix in cream and cheese until smooth. Adjust seasonings and sprinkle parsley on top.

# Notes:

01 - Swap in any small pasta shape you like.
02 - For prepping ahead, keep pasta separate until serving.
03 - Both mild and spicy versions of sausage taste great.
