My Best Apple Pie (Print Version)

# Ingredients:

01 - Two pie crusts (store-bought or made from scratch).
02 - Roughly 10 cups of thinly sliced apples (from about 8 large ones).
03 - Half a cup of white sugar.
04 - A quarter cup of plain flour.
05 - One and a half teaspoons of ground cinnamon.
06 - A quarter teaspoon each of nutmeg and allspice.
07 - One tablespoon of lemon juice.
08 - One egg whisked with a tablespoon of milk (for the top).
09 - Optional: Coarse sugar for sprinkling on top.

# Instructions:

01 - Toss the apple slices with some sugar, and mix in the flour, lemon juice, and seasonings. You can cook the mixture for 5 minutes beforehand if you want.
02 - Heat the oven up to 400°F. Shape the bottom crust into your pie pan, heap in the warm or cooled filling. Cut the top crust into narrow strips, weave them over the pie, pinch the edges, brush with the egg mixture, and sprinkle with sugar if you'd like.
03 - Start at 400°F for the first 25 minutes. Drop the temperature to 375°F, protect the edges with a pie shield, and bake another 35-40 minutes. Let it cool for at least 3 hours before enjoying.
