Fresh Greek Salad (Print Version)

# Ingredients:

01 - 1/2 cup feta cheese, diced.
02 - 1 tablespoon fresh parsley, finely chopped.
03 - 1 cup cherry tomatoes, halved.
04 - 1/4 cup green olives.
05 - 1 tablespoon red wine vinegar.
06 - 1/4 cup Kalamata olives.
07 - Salt and pepper as you like.
08 - 2 tablespoons olive oil.
09 - 1/4 teaspoon dried oregano.
10 - 2 cups cucumber slices.
11 - 1/2 red onion, sliced thinly.

# Instructions:

01 - Slice the cucumbers and red onion. Halve the small tomatoes. Cut the feta into small cubes.
02 - In a big bowl, toss together the cucumber slices, halved tomatoes, red onion, and both types of olives. Add the feta cubes last.
03 - Sprinkle oregano, parsley, salt, and pepper. Drizzle olive oil and vinegar all over.
04 - Gently mix the salad so everything comes together nicely. Serve it right away.

01 - Add bell peppers or radishes for crunch.
02 - Stays fresh in the fridge for up to 2 days.
