Heat your oven to 175°C and lightly coat your baking tray with non-stick spray.

Toss the banana, cinnamon, vanilla, and plant milk into a blender or food processor. Blend until smooth, then pour into a wide bowl.

Take each slice of bread and divide it into four equal strips.

Dip the bread strips into the banana mixture one by one, making sure they’re fully coated, and arrange them on the baking tray.

Pop the tray in the oven for 20 to 22 minutes. Flip the sticks halfway through, at the 10-minute mark.

Sprinkle powdered sugar over the top and serve warm with maple syrup.
