Garlic Parmesan Cabbage (Print Version)

# Ingredients:

01 - Half of a large red or green cabbage head.
02 - 6 tablespoons of grated Parmesan cheese, plus extra for topping.
03 - 4 medium garlic cloves, finely chopped or shredded.
04 - 3 tablespoons of olive oil, extra-virgin preferred.
05 - 3 tablespoons of rice vinegar.
06 - 1 tablespoon of low-sodium soy sauce.
07 - Half a teaspoon of salt.
08 - One-fourth teaspoon of crushed red pepper flakes (optional).

# Instructions:

01 - Set your oven to 425°F. Slice the cabbage into 8 pieces (around 1-inch thick) and keep the core attached to hold them together.
02 - In a small bowl, stir together the Parmesan, garlic, olive oil, vinegar, soy sauce, and salt until well combined.
03 - Place the cabbage wedges, with the cut side down, on a large baking sheet with edges. Use a brush to coat all sides with the garlic-Parmesan mixture.
04 - Bake for 20 minutes or until the edges are crispy and golden. Turn the slices over and bake for another 10 minutes until the cabbage softens and looks golden.
05 - Top it off with extra Parmesan and a sprinkle of red pepper flakes, if you like.

# Notes:

01 - Goes great with grilled meats or can be served as a vegetarian main dish.
02 - Want extra crunch? Add toasted breadcrumbs right before serving.
