Set your oven to 425°F. Slice the cabbage into 8 pieces (around 1-inch thick) and keep the core attached to hold them together.

In a small bowl, stir together the Parmesan, garlic, olive oil, vinegar, soy sauce, and salt until well combined.

Place the cabbage wedges, with the cut side down, on a large baking sheet with edges. Use a brush to coat all sides with the garlic-Parmesan mixture.

Bake for 20 minutes or until the edges are crispy and golden. Turn the slices over and bake for another 10 minutes until the cabbage softens and looks golden.

Top it off with extra Parmesan and a sprinkle of red pepper flakes, if you like.
