In my bistro, salmon avocado mini puffs make a splash during happy hour. I whipped up this idea one evening when I wanted to jazz up leftover salmon from lunch service. The mix of my flaky pastry with tender salmon and creamy avocado has become a must-have on my menu.

Texture Wonder

What gets me about these tiny bites is how the flavors play together. The crispy puff pastry shell gives way to a smooth salmon and avocado filling. In my kitchen, I always toss in some fresh dill and a sprinkle of black sesame seeds - that little something extra that makes folks come back for more.

What goes in my puffs

  • Puff pastry: 1 homemade roll
  • Salmon: 150 g carefully picked
  • Avocado: 1 perfectly ripe
  • Cheese mix:
    • 3 spoonfuls of farm-style yogurt
    • 2 spoonfuls of rich cream cheese
  • Seasonings:
    • A handful of garden-fresh dill
    • Juice from an organic lemon
    • Sea salt and fresh ground pepper
  • Finishing touches:
    • 1 fresh egg yolk
    • Toasted black sesame seeds

Setting up the basics

Working the dough
I roll out my puff pastry, scatter black sesame seeds on half, then press them in with my rolling pin.
Cutting shapes
Using my favorite glass, I cut neat circles and place them on a baking sheet lined with parchment paper.
Baking to golden perfection
A quick brush with egg yolk and into my oven at 180°C for 10 minutes.

The tasty filling

Flavor combo
I dice my salmon and avocado into small cubes, mix them with my cheeses, chopped dill, a squeeze of lemon, salt and pepper.
Gentle assembly
I carefully split my warm pastry puffs and stuff them generously with my mixture.

My pro tips

  • Mix it up: Sometimes I swap salmon for marinated shrimp or homemade confit tuna.
  • Citrus kick: I often grate organic lemon zest into the filling.
  • Wow factor: I use star or heart cookie cutters for special occasions.

Frequently Asked Questions
