Easy Light Flan (Print Version)

# Ingredients:

01 - 50g honey.
02 - 2 eggs.
03 - 30g cornstarch.
04 - 250g Skyr.
05 - 1/2 lemon (juice and zest).
06 - 100g mixed berries (for topping).

# Instructions:

01 - Crack the eggs into a bowl. Add cornstarch, honey, lemon juice with zest, and Skyr.
02 - Whisk everything together until the mixture looks smooth and uniform.
03 - Grease your pan and pour the mixture into it evenly.
04 - Pop it into a preheated oven at 180°C and bake for 30–40 minutes.
05 - Let it cool and then store it in the fridge overnight.
06 - Top with berry coulis and a few fresh mint leaves before serving.

# Notes:

01 - You can keep this dessert in the fridge for up to 3 days.
02 - Instead of Skyr, use plain yogurt or fromage blanc.
