# Ingredients:

01 - 1/4 cup of all-purpose flour.
02 - 2 cups of milk.
03 - 2 tablespoons of butter.
04 - 450 g of breakfast sausage.
05 - Salt and pepper to taste.
06 - 1 cup of grated cheddar cheese.
07 - 4 eggs.
08 - 4 cups of frozen tater tots.
09 - Chopped chives.

# Instructions:

01 - Set your oven to 425°F and let it heat up.
02 - Brown the sausage in a skillet over medium heat, then set it aside.
03 - Melt the butter and mix in the flour to form a paste, then slowly stir in the milk. Keep whisking until thick. Add some seasoning, then stir in the sausage.
04 - Spread the tater tots out on a baking sheet and bake for 20-25 minutes until crisp and golden.
05 - Fry your eggs your favorite way—whether you like them sunny-side up or over easy.
06 - In each bowl, layer the tater tots, then pour on the sausage gravy. Top it with a fried egg and some grated cheese, then finish with a sprinkle of chives.
