# Ingredients:

01 - 3 big-sized sweet potatoes.
02 - 3 tbsp of olive oil.
03 - Half a teaspoon of cinnamon.
04 - Half a teaspoon of smoked paprika.
05 - 1/2 tsp ground cumin.
06 - A dash of ground coriander (1/2 tsp).
07 - 1/2 tsp chili flakes.
08 - Kosher salt, 1 teaspoon.
09 - Black pepper, 1/2 tsp.
10 - 1 tbsp honey (hot or regular).
11 - Feta cheese crumbles, 1/3 cup.
12 - Some parsley or chives to garnish.
13 - Extra honey to drizzle on top.

# Instructions:

01 - Slice the cleaned sweet potatoes into rounds about 1/3-inch thick. Heat the oven to 425°F.
02 - Grease your baking tray, toss the sweet potato slices in olive oil, sprinkle on seasoning, drizzle honey, and spread them out in a single layer.
03 - Roast for 20 minutes, turn the slices over, and cook an extra 20-25 minutes until crispy and golden.
04 - Move the baked slices to a plate or tray, sprinkle with salt, pour over a bit of honey, and sprinkle feta and fresh herbs on top.
