Crispy Veggie Bites (Print Version)

# Ingredients:

→ Base

01 - 200 grams of dry chickpeas
02 - Half an onion

→ Spices and Seasonings

03 - One tablespoon of light miso paste (or a broth cube)
04 - 1/4 teaspoon of mild paprika
05 - Some salt for taste
06 - 1/8 teaspoon of black pepper
07 - 1/4 teaspoon of smoky paprika
08 - 1/4 teaspoon garlic powder
09 - A sprinkle of ground coriander
10 - One tablespoon of herbes de Provence

→ Other Ingredients

11 - Two tablespoons of corn starch
12 - Cooking oil
13 - One teaspoon of vinegar
14 - 1/4 teaspoon of baking powder

# Instructions:

01 - Soak the chickpeas in a bowl full of water for an entire day.
02 - Drain the chickpeas and rinse them well. Blend half of them with a pinch of salt until they’re crumbly.
03 - Take the other half of the chickpeas and blend them with the onion, miso, seasonings, vinegar, oil, starch, and baking powder until the mixture turns into a paste-like consistency.
04 - Mix both parts together until you’ve got a smooth, uniform dough.
05 - Preheat your oven to 200°C. Shape the dough into nugget-like pieces, brush them with oil, and bake for about 15 to 20 minutes until they’re golden and crispy.

# Notes:

01 - You need to soak the chickpeas the day before making this.
02 - This recipe makes about 15 nuggets.
