Cut the potatoes into slices about ⅛-inch thick. To stop them from turning brown, place the slices in water while you prepare the other stuff.

Turn on your oven to 350°F. Coat a 9x13 dish lightly with nonstick cooking spray.

Cook the ground beef in a large pot or heavy pan over medium-high heat. Stir in the onions and garlic while cooking. Break up the meat as it browns, then drain the grease.

Grab a medium bowl and whisk together the cream of mushroom soup, onion seasoning, half-and-half, salt, and pepper.

Drain the potatoes and arrange a third of them on the bottom of your prepared dish. Top with a third of the cooked meat, ¾ cup of cheese, and a third of the creamy mixture.

Do two more rounds of layering using the potatoes, beef, cheese, and sauce. For the last layer, sprinkle 1½ cups of cheese over the top.

Cover the dish snugly with foil and bake it for 70 minutes. Then, take the foil off and bake for 20 more minutes so the cheese gets golden and bubbly.

Take the dish out and cool it for about 15 minutes before eating. It'll still be hot, so let it rest.
