Break the broccoli into florets. Drop them into salted boiling water for about 5 minutes. Quickly cool them down under cold water, then drain thoroughly. Spread evenly in an oiled baking dish.

Chop the ham into bite-sized pieces and toss them into the dish with the broccoli.

Whisk the eggs and gradually stir in the sifted flour. Slowly pour in the milk while mixing. Blend in the grated Emmental, nutmeg, and season with salt and pepper.

Pour the batter over the broccoli and ham. Bake at 210°C (or gas mark 7) for about 40 minutes.
