Cinnamon brioche bites (Print Version)

# Ingredients:

→ For the brioche

01 - 2 eggs
02 - 40g granulated sugar
03 - A pinch of salt
04 - 60ml milk (whole or low-fat)
05 - 1 teaspoon vanilla extract
06 - 20-30g butter for cooking
07 - 1 brioche loaf, cut into 2cm cubes
08 - 1 teaspoon ground cinnamon

→ For serving (choose one or more)

09 - Red fruit sauce
10 - Chocolate sauce
11 - Maple syrup
12 - Salted caramel sauce
13 - Chocolate ganache

# Instructions:

01 - In a large bowl, whisk the eggs, milk, vanilla, and salt together until smooth.
02 - Cut your brioche into cubes about 2cm on each side. A slightly stale brioche works better as it absorbs the mixture well while holding its shape.
03 - Soak the brioche cubes in the egg-milk-vanilla mixture for 1-2 minutes per side, making sure they’re nicely coated.
04 - Melt the butter in a non-stick pan over medium heat. Cook the cubes on all sides for 2-3 minutes each, until they turn golden and crispy.
05 - Blend the sugar and cinnamon on a plate. Roll the hot cubes in this mixture so they get a lovely coating.

# Notes:

01 - To cook this well, use brioche that’s a little stale; it holds up better during preparation.
02 - Don’t soak the cubes too long, or they might fall apart.
03 - These taste best warm, so serve them right away.
