In a large bowl, whisk the eggs, milk, vanilla, and salt together until smooth.

Cut your brioche into cubes about 2cm on each side. A slightly stale brioche works better as it absorbs the mixture well while holding its shape.

Soak the brioche cubes in the egg-milk-vanilla mixture for 1-2 minutes per side, making sure they’re nicely coated.

Melt the butter in a non-stick pan over medium heat. Cook the cubes on all sides for 2-3 minutes each, until they turn golden and crispy.

Blend the sugar and cinnamon on a plate. Roll the hot cubes in this mixture so they get a lovely coating.
