Boursin One-Pan (Print Version)

# Ingredients:

01 - 1 tablespoon avocado oil.
02 - 4 thin boneless, skinless chicken breasts.
03 - 1/2 teaspoon mustard powder.
04 - 1/2 teaspoon garlic powder.
05 - 1/2 teaspoon dried parsley.
06 - 1/2 teaspoon dried oregano.
07 - 1/2 teaspoon salt (used in parts).
08 - Black pepper, as needed.
09 - 2 tablespoons butter.
10 - 1 small minced shallot.
11 - 1 minced garlic clove.
12 - 1/4 cup dry white wine.
13 - 1 cup chicken stock.
14 - 5.2 oz Boursin cheese, softened.
15 - 1/2 cup half and half.
16 - 1/3 cup grated parmesan cheese.
17 - 2 sprigs fresh thyme.
18 - 2 teaspoons dried parsley.

# Instructions:

01 - Sprinkle chicken breasts with the salt, black pepper, garlic powder, mustard powder, oregano, and parsley.
02 - Warm up oil in a big skillet over medium-high heat. Sear each side of chicken for 3-5 minutes or until fully cooked. Set chicken aside on a plate.
03 - In the same skillet, melt butter. Add the garlic and shallots, cooking about 3 minutes until soft. Pour in the wine and scrape up the browned bits, letting it reduce by half.
04 - Pour in the chicken stock and stir in the Boursin cheese, letting it melt down to thicken the sauce. Mix in the parmesan cheese, thyme, half and half, and parsley. Let it gently cook for 5 minutes.
05 - Put the chicken back into the skillet and let it warm through. Add extra seasoning to taste.

# Notes:

01 - This sauce also works great with fish or steak.
02 - Pick a dry white wine that you enjoy drinking.
