Toss the beef, cheddar, parmesan, breadcrumbs, onion, garlic, egg, and salt and pepper into a big bowl. Stir everything up with your hands or a spoon, but don't overdo it.

Split the mix into 12 equal parts and shape them into balls. Wrap a bacon strip around each one and secure it with a toothpick if it needs to stay put.

Get your oven heating to 200°C (400°F). Line a baking sheet with parchment paper and arrange the bacon-wrapped balls on it. Bake for around 15-20 minutes, or until the bacon's nice and crispy.

Dish them up while they're warm. You can add extras like lettuce, tomatoes, pickles, jalapeños, ketchup, or mustard, whatever your heart desires.
