Bacon Beef Carbonara (Print Version)

# Ingredients:

01 - 1 egg and 2 yolks.
02 - 240g pasta (bucatini or spaghetti).
03 - 40g hard Italian cheese, grated.
04 - Thinly sliced dried beef bacon.
05 - 2-3 garlic cloves.
06 - 1/2 tsp black pepper.
07 - 1-2 ladles of saved pasta water.
08 - Optional: 1 tbsp butter for extra creaminess.

# Instructions:

01 - Boil water with salt in a pot. Cook pasta according to the box and keep some water aside before draining.
02 - On medium heat, cook the beef bacon until crispy and fat renders. Toss in garlic and stir for 3-5 minutes.
03 - Add cooked pasta to the pan with the bacon and mix so it’s well coated.
04 - In a bowl, beat together the eggs, yolks, cheese, pepper, and reserved pasta water.
05 - Take it off the heat. Pour the egg mixture into the dish, stirring until you reach a creamy texture. Adjust with more water or cheese if needed.
06 - If you like it richer, add butter and stir until melted. Serve with extra grated cheese.
