Boil water with salt in a pot. Cook pasta according to the box and keep some water aside before draining.

On medium heat, cook the beef bacon until crispy and fat renders. Toss in garlic and stir for 3-5 minutes.

Add cooked pasta to the pan with the bacon and mix so it’s well coated.

In a bowl, beat together the eggs, yolks, cheese, pepper, and reserved pasta water.

Take it off the heat. Pour the egg mixture into the dish, stirring until you reach a creamy texture. Adjust with more water or cheese if needed.

If you like it richer, add butter and stir until melted. Serve with extra grated cheese.
