Avocado Mango Shrimp Salad (Print Version)

# Ingredients:

01 - 2 ripe avocados that are still firm.
02 - 1 mango, well ripened.
03 - 300g of cooked, peeled shrimp.
04 - 1 small head of lettuce (romaine or baby leaves work too).
05 - A couple of sprigs of fresh cilantro.
06 - 3 tablespoons of extra-virgin olive oil.
07 - 2 tablespoons of fresh lime juice.
08 - 1 tablespoon of honey.
09 - 1 teaspoon of freshly grated ginger.
10 - Salt and pepper to your liking.
11 - Half a cucumber or red bell pepper (optional).
12 - A handful of roasted cashews (optional).

# Let's Cook:

01 - Rinse your lettuce leaves thoroughly and dry them well. Cut the avocados into cubes and toss them with a little lime juice to stop them from browning. Peel and chop the mango into small chunks.
02 - If the shrimp are raw, simmer them in salted boiling water for about 2–3 minutes. Drain them and let them cool down.
03 - Whisk together olive oil, lime juice, honey, and grated ginger. Add some salt, crack in some pepper, and mix until it's smooth.
04 - Lay the lettuce in a big bowl or spread it onto plates. Add the cubes of avocado, mango, and the shrimp on top. Sprinkle with cilantro and your optional extras, if using.
05 - Pour the dressing over your salad just before you’re ready to dig in. Gently toss it all together.
