Zucchini & Mushroom Stir (Print Version)

# Ingredients:

→ Vegetables

01 - 1 medium onion, thinly sliced
02 - 2 medium zucchini, cut into half-moon shapes
03 - 2 cups of mushrooms, chopped
04 - 2 garlic cloves, minced

→ Seasonings

05 - 1 tablespoon of soy sauce or tamari
06 - 2 tablespoons of olive oil
07 - 1/4 teaspoon of chili flakes (optional)
08 - 1/4 teaspoon of salt
09 - 1/2 teaspoon of ground black pepper
10 - 1 tablespoon of fresh parsley, chopped

# Let's Cook:

01 - Slice the zucchini into half-moons, chop the mushrooms and the onion, and mince the garlic finely.
02 - Heat some olive oil in a large skillet over medium-high heat. Toss in the onions and sauté for about 3-4 minutes until they start looking translucent.
03 - Stir in the mushrooms and keep cooking for 4-5 minutes, giving them a stir every now and then until they’re nice and golden.
04 - Drop in the zucchini and garlic, cooking everything together for about 5-6 minutes until the zucchini gets tender but still has a bit of crunch.
05 - Pour in the soy sauce, sprinkle on the pepper, chili flakes, and salt, and give everything a good mix. Let it cook for another 1-2 minutes, then finish with parsley just before serving.
