Preheat your oven to 180°C. Slice the onion and cut the zucchini into thin rounds.

Heat a pan and sauté the zucchini with a bit of olive oil in it.

Prick the puff pastry sheet with a fork, then lightly bake it ahead of time to avoid sogginess.

Whisk together the eggs and light cream in a mixing bowl. Arrange the zucchini and pieces of goat cheese over the crust. Pour the flan mixture evenly on top.

Pop it in the oven for around 30 minutes at 180°C. Keep an eye on it to make sure it gets golden and evenly cooked.

Let the tart cool down a bit before cutting it. Sprinkle with fresh herbs or more pepper if you’d like.
