Prepare the night before by poking garlic bits into the wild boar leg. Stir together the honey and mustard, then coat the meat generously with the mix.

Sprinkle on some salt, pepper, thyme, and rosemary. Toss in the bay leaves, cover everything up, and let it marinate in the fridge for a whole day or even two.

On the cooking day, heat the oven to 130°C. Uncover the boar, add whole garlic cloves and some cinnamon shavings if you like.

Dot the meat with butter here and there and drizzle some olive oil over it. Roast in the oven for 4 to 5 hours, making sure you pour its juices over it from time to time.
