Wild Boar Leg Rustic Flavor (Print Version)

# Ingredients:

→ Main Meat

01 - Wild boar leg - 2-3 kg
02 - Honey - 3 tablespoons
03 - Dijon mustard - 2 tablespoons
04 - Bay leaves - 2 pieces

→ Seasonings and Herbs

05 - Fresh rosemary - a few sprigs
06 - Fresh thyme - a handful
07 - One whole garlic bulb
08 - Butter - 20 g
09 - Olive oil - as needed
10 - Salt - to taste
11 - Pepper - to suit preference
12 - Cinnamon sticks (optional) - small shavings

# Instructions:

01 - Prepare the night before by poking garlic bits into the wild boar leg. Stir together the honey and mustard, then coat the meat generously with the mix.
02 - Sprinkle on some salt, pepper, thyme, and rosemary. Toss in the bay leaves, cover everything up, and let it marinate in the fridge for a whole day or even two.
03 - On the cooking day, heat the oven to 130°C. Uncover the boar, add whole garlic cloves and some cinnamon shavings if you like.
04 - Dot the meat with butter here and there and drizzle some olive oil over it. Roast in the oven for 4 to 5 hours, making sure you pour its juices over it from time to time.
