Peel, wash, and shred the carrots using a medium grater.

In a large bowl, mix together the fish sauce, lime juice, sugar, water, garlic, chili powder, and crushed coriander seeds.

Add the grated carrots to the bowl and stir thoroughly so everything is coated. Chill in the fridge for 15 minutes.
