Red Velvet Cookies (Print Version)

# Ingredients:

01 - 4 oz of softened cream cheese.
02 - 1/4 cup of plain white sugar.
03 - A pinch of salt (1/8 tsp for the filling).
04 - 1 egg yolk at room temp (used for filling).
05 - 2 tsp sour cream.
06 - A tiny splash (1/4 tsp) of vanilla extract for the filling.
07 - 2 cups all-purpose flour.
08 - 2 tsp of cocoa powder.
09 - 1/4 tsp of salt for the cookie dough.
10 - 1 cup of softened butter.
11 - Half a cup of brown sugar.
12 - 1 egg yolk at room temp (used for cookies).
13 - 1 tsp of vanilla extract for the cookie dough.
14 - Red-colored gel food coloring.
15 - Red sparkling sugar for decoration.

# Instructions:

01 - Mix the cream cheese with the sugar until smooth. Toss in the salt, vanilla, sour cream, and egg yolk. Stir it all together, then chill for half an hour.
02 - Combine the flour, cocoa, and salt in one bowl. In another bowl, cream butter and sugar together. Add the egg yolk and vanilla extract. Slowly add the dry ingredients and food dye to the wet mixture.
03 - Form dough into small balls, roll each one in red sugar, and press a small hole in the center. Bake on 300°F for 10 minutes.
04 - Press the indents again, spoon in the cream cheese mix, and bake for another 10-12 minutes until set.
05 - Let them sit on the tray for 2 minutes, then move them to a rack to fully cool.

# Notes:

01 - Regular sugar with a drop of red coloring can replace red sugar.
02 - Skip the sour cream if you’d like.
03 - Stays fresh 2-3 days on the counter or up to a week in the fridge.
