Savory Veggie Waffles (Print Version)

# Ingredients:

01 - Potatoes - 150 g
02 - Zucchini - 150 g

→ For the Batter

03 - Milk - 10 cl
04 - Olive oil - 2 tablespoons
05 - Mozzarella - 1 ball
06 - Parsley - 1/2 bunch
07 - Egg - 1
08 - Grated cheese - 40 g
09 - Flour - 60 g

# Instructions:

01 - Shred the zucchini and potatoes. Wrap them in a towel and squeeze out all the excess liquid.
02 - In a large mixing bowl, combine the flour, grated cheese, egg, olive oil, milk, and chopped parsley together until smooth.
03 - Warm up the greased waffle maker ahead of time.
04 - Scoop two spoonfuls of batter onto the waffle maker, add a slice of mozzarella, and cover it up with more batter. Close the lid and cook for about 5-7 minutes.
05 - Serve while it's hot. You can pair it with tomato sauce if you'd like.
