Turkey Gravy (Print Version)

# Ingredients:

01 - Optional: uncooked turkey giblets and neck.
02 - 4 cups chicken broth (low-sodium).
03 - 1/2 cup plain flour.
04 - Turkey drippings.
05 - Salt & pepper for seasoning.

# Instructions:

01 - Simmer the turkey giblets and neck in water for about 1 hour, until fully cooked.
02 - Set aside giblets, remove the meat from the neck, toss out the liver, and chop up the rest.
03 - Transfer the drippings from the turkey pan into a bowl. Wait for the fat to rise, then skim off most of it.
04 - Combine 1 cup of drippings and flour in a saucepan, stirring until smooth. Let it cook until golden.
05 - Pour in the chicken broth and another 1 cup of drippings while whisking.
06 - Stir constantly for about 5–8 minutes until it thickens up. Toss in the diced giblet meat.
07 - If needed, thin it out with extra liquid or thicken using cornstarch mix. Add some salt and pepper to taste.

# Notes:

01 - Can stay fresh in the fridge for 2–3 days.
02 - Prep it up to 2 days beforehand.
03 - Use 1:1 gluten-free flour for a gluten-free option.
