Vosgienne Potato Dish (Print Version)

# Ingredients:

01 - 6.6 lbs of Charlotte potatoes.
02 - 4.4 lbs of smoked pork collar.
03 - 20 thin slices of smoked bacon.
04 - 1 large onion.
05 - 1 leek.
06 - 2 cups of heavy cream.
07 - 1 cup of dry white wine.
08 - Black pepper to taste.

# Instructions:

01 - Peel the potatoes and slice them into thin 5mm rounds. Slice up the leek and the onion finely.
02 - Cut the smoked pork collar into chunks, trimming any extra fat if you'd like.
03 - In a large pot, layer the potatoes, meat, and veggies in turns. Top everything with slices of smoked bacon.
04 - Add the heavy cream and dry white wine over the layers, then season well with black pepper.
05 - Cover the pot and bake at 350°F for 2.5 to 3 hours. Uncover in the last 30 minutes to allow the top to brown.
