Peel the potatoes and slice them into thin 5mm rounds. Slice up the leek and the onion finely.

Cut the smoked pork collar into chunks, trimming any extra fat if you'd like.

In a large pot, layer the potatoes, meat, and veggies in turns. Top everything with slices of smoked bacon.

Add the heavy cream and dry white wine over the layers, then season well with black pepper.

Cover the pot and bake at 350°F for 2.5 to 3 hours. Uncover in the last 30 minutes to allow the top to brown.
