Chop the tomatoes into wedges and set them aside in a bowl.

Quarter the bell pepper, remove the seeds and stem, and blend it with garlic into a smooth paste.

Blend in the smoked paprika, sumac, olive oil, salt, and pepper. Mix it all well.

Pour the pepper sauce over the tomatoes and toss it all together. Sprinkle parsley on top.
