Authentic Thai Fried Rice (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 tablespoons of vegetable, peanut, or canola oil
02 - 2 finely chopped garlic cloves
03 - Half a diced white or yellow onion
04 - 150 grams of thinly sliced chicken breast
05 - 3 scallions cut into 4 cm chunks
06 - 2 eggs whisked lightly
07 - 3 cups of cold, cooked jasmine rice

→ Sauce Choices (pick one)

08 - Option 2: 2 tablespoons fish sauce + 1.5 tablespoons oyster sauce + 1 teaspoon sugar
09 - Option 1: Half a tablespoon soy sauce + half a tablespoon oyster sauce
10 - Option 3: 1.5 tablespoons light soy sauce + 1.5 tablespoons Gold Mountain Thai seasoning

11 - Slices of cucumber
12 - Fresh cilantro
13 - Tomato wedges

# Instructions:

01 - Heat up your oil in a big pan or wok over medium-high heat. Stir the garlic around for about 20 seconds.
02 - Toss in the onion and cook it for a minute. Then add the chicken and scallions. Keep at it until the chicken starts looking white.
03 - Push everything off to one side. Pour the eggs into the empty space and scramble them quickly for half a minute.
04 - Stir in the rice and your sauce pick. Fry it all together for 2 minutes to coat the rice and heat everything through.

01 - Day-old cold rice works best for this dish
02 - Substitute chicken with tofu, crab, or shrimp if you'd like
