Peel the onion and dice it into small cubes. Peel the garlic and chop it thinly.

Take the skin off the chicken and place it at the bottom of your slow cooker or Dutch oven.

Toss in the garlic, onion, ginger, soy sauce, honey, rice vinegar, and sake. Quickly give everything a mix.

Cook for 4 hours using a slow cooker or bake in a Dutch oven at 140°C.

Take the bones out and shred the chicken using two forks. Pair with Japanese rice and sprinkle some sesame seeds on top.
