Southwest Chicken Rolls (Print Version)

# Ingredients:

→ Inside Egg Rolls

01 - 2 tablespoons of cooking oil
02 - Shredded chicken breast, 8 oz cooked
03 - 1/2 cup of rinsed and drained black beans from a can
04 - 1/2 cup of corn (fresh, frozen and thawed, or canned)
05 - 1 finely chopped jalapeño
06 - 1/4 cup of diced green onions
07 - 1/4 cup of chopped-up red peppers
08 - 1/3 cup chopped spinach (frozen and thawed)
09 - 2 tablespoons minced fresh cilantro
10 - 3/4 teaspoon of cumin powder
11 - 3/4 teaspoon of chili seasoning
12 - 1/4 teaspoon cayenne
13 - 1/2 teaspoon salt
14 - 1 cup of shredded Monterey Jack cheese
15 - 10 to 12 wrappers for egg rolls
16 - Oil for frying

→ Avocado Sauce

17 - 2 tablespoons finely minced cilantro
18 - 1 mashed medium avocado
19 - 1/2 cup of ranch dressing
20 - 2 tablespoons of buttermilk
21 - 1 and a half teaspoons of lime juice
22 - 1/4 teaspoon powdered garlic
23 - 1/4 teaspoon powdered onion
24 - 1/4 teaspoon salt

# Instructions:

01 - Use a big pan and heat up the oil. Let the peppers cook until they soften up. Toss in green onions, jalapeño, corn, beans, spinach, and your spices (salt, chili powder, cumin, and cayenne). Let them cook together for about 3 to 4 minutes until tender.
02 - Transfer the cooked veg into a large bowl. Mix them with the grated cheese, shredded chicken, and chopped cilantro. Stir everything really well until it’s all blended evenly.
03 - Take an egg roll wrapper and place it in a diamond shape. Add about 1/4 cup of filling in the center. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Dab some water on the top corner to stick it together. Repeat for all the wrappers.
04 - Get the oil heated to 375°F (190°C). Fry a few at a time, turning them golden brown and crispy in about 3-4 minutes. Once cooked, place them onto paper towels to soak up extra oil.
05 - Blend together the ranch, avocado, buttermilk, lime juice, cilantro, garlic powder, onion powder, and salt. Mix until smooth and creamy. Serve alongside the egg rolls as a dip.

# Notes:

01 - Prefer spicier? Toss in extra jalapeño.
02 - Go with fresh, canned, or frozen corn, whatever works for you!
