Set the oven to 180°C (about 350°F).

Wash the sweet potato, dry it off, and use a fork to poke holes all over. This lets the steam escape while cooking.

Wrap the sweet potato in parchment paper and pop it in the oven for 40–50 minutes, or until it feels soft.

Split the sweet potato lengthwise, top it with yogurt, honey, and chopped nuts. Sprinkle on parsley if you like.
