Sweet Cinnamon Loaf (Print Version)

# Ingredients:

01 - 1 1/2 cups (300g) white sugar.
02 - 2 cups (250g) plain flour.
03 - 1/4 cup (57g) melted unsalted butter (to coat).
04 - 2 teaspoons baking powder.
05 - 1 tablespoon vanilla extract.
06 - 1 large egg, room temp.
07 - 1/2 teaspoon kosher salt.
08 - 2 tablespoons of melted butter (in batter).
09 - 1 teaspoon ground cinnamon.
10 - 1/4 teaspoon ground nutmeg.
11 - 1 1/4 cups (306g) full-fat milk.
12 - 1/2 cup (100g) white sugar (to coat).

# Instructions:

01 - Preheat your oven to 350°F and coat an 8.5x4.5 loaf pan with non-stick spray.
02 - In a big bowl, stir together flour, sugar, salt, and baking powder.
03 - In another bowl, whisk milk, vanilla, egg, and melted butter until smooth.
04 - Gently fold the wet mix into the dry, stopping as soon as it's combined. No need to fully smooth it out.
05 - Pour into the prepared pan, then bake for about 60-70 minutes or until a toothpick comes out with minimal crumbs.
06 - After cooling for 10 minutes, take it out of the pan, brush with butter, and roll it in your spiced sugar mix.

# Notes:

01 - Mixing too much makes it dense.
02 - Coating works best when it's warm.
03 - Save any left-over sugar mix.
